The industry segment food has seen numerous developments in the past few years. So it is a good time to ask the question “What’s Next?”. As such, the human microbiome got into the focus of researchers and risk assessors. Novel proteins are being used for food manufacturing, both, from insects and plants. But what are the opportunities, what are the risks? How do we tackle the ever-increasing numbers of potential adulterants? Are non-targeted methods the answer? can consumer help with testing? What can portable consumer devices achieve and where might be challenges? How far we are in method harmonization for allergen detection? How did pandemics impact on consumers and eating habits? And last but not least, how can we avoid food waste?
