Food Safety at the Last Mile: Hygiene & Sanitation Challenges and Solutions for Food Retail

This webinar will provide insights into the food safety and hygiene challenges in the retail environment based on first-hand experience, and practical considerations of their management from a retailer’s perspective.
Additionally, the food retail sector is increasingly required to consider the impact on food safety and quality as a result of unforeseen challenges, such as supply chain disruptions due to global events like the conflict in Ukraine and COVID-19.
Meeting regulatory and public health expectations cannot be overlooked either. According to the CDC, over 60% of U.S. food illness outbreaks can be attributed to retail food and food service establishments, with the top five contributing factors being:
1. Food from unsafe supplier sources
2. Inadequate cooking temperatures
3. Improper hot or cold holding for Time-Temperature Controlled for Safety (TCS) foods
4. Poor employee health and hygiene
5. Cross-contamination incidences from unclean equipment, utensils, etc.

She is a qualified microbiologist, Lead Auditor, an active member of IAFP, and Chair of the Microbiology group at CampdenBRI. At Vikan, Deb provides food safety and hygiene advice, training, and support to colleagues and customers.

Kheradia (Education and Technical Support Manager @Remco) Amit has over 18 years of experience in food safety, quality, and processing technology, and has worked for various SMEs and Fortune 500 companies in North America and Africa. Conversant with HACCP, U.S. and Canadian regulations, and global food safety standards, he also has an M.S. degree in Food Safety and Quality Assurance from the University of Guelph (Canada), and a B.S. degree in Food Science and Technology from the University of Nairobi (Kenya). At Remco, he provides technical expertise, support, and training on food safety to our internal team, customers, and end users. Alec Kyriakides (Independent Food Safety Consultant ) Alec has over 35 years food industry experience, most recently as Head of Technical Operations at Sainsbury’s, where he worked for 28 years, and prior to which he worked in manufacturing including the brewing, dairy, and food sectors. He is a Non-Executive Board Director of CampdenBRI, Board Trustee of the Institute of Food Science & Technology, Member of the Advisory Committee on the Microbiological Safety of Food, Chair of the BRCGS International Advisory Board and Honorary Lecturer at Queen’s University Belfast. A microbiologist by training, he is also the co-author of books on foodborne pathogens, including Salmonella, Listeria, C. Botulinum, Campylobacter, and E. Coli. Tara Dryer (National Food Retail Market Specialist @Remco) Tara brings over 20 years of experience from Procter & Gamble, one of the leading multinational consumer-goods corporations in the world. She has extensively worked in the Healthcare, Hospitality, Education, Retail, Food Service and Distribution sector divisions. Tara also possesses a B.S. degree from Central Michigan University. At Remco, she specializes in advising our grocery accounts on best management practices regarding the selection and use of our sanitation and material handling tools and equipment.
