Predicting heat stability of wine: the heat test revisited
The heat test has been used successfully for decades to predict heat stability of wine and bentonite dose rates; however, there has been ongoing concerns about test reproducibility and long turnaround times. To address these issues, the heat test has been revisited. Now, after years of investigations and storage trials, a shorter heat test is proposed that provides same-day results without compromising accuracy.
