How are you “smart staffing” right now? What sort of strategies are working for you?

Has anyone developed a contingency plan for if/when you need to close due to a positive covid-19 case in your kitchen? Also please share if anyone has already had to close and what your experience has been.

We have been required to social distance for 3 weeks now. Masks have been required for a week whenever people leave thier home. We are currently reducing our staffing to 4 hour shifts of 10 to ensure we can produce the meals we are serving which are approximately 30% more than we serve on a normal school day

We do have a contigency plan. I have trained the Warehouse/Purcahsing team to take over in production of meals. The Transportation director is my replacement if I get sick. We also have the red cross on standby if needed.

We also have a spreadsheet of menus by week that include the number of cases needed by site/bus route for service. We have placed orders through June 30th. INcluding contigency orders for the product that gets cancelled or backordered.

The CDC issued new guidelines for essential workers on 4/8/20. The guidance is focused on when those workers can return to work after having been exposed to the new coronavirus. We are checking with our local health department for more specific guidance.
