OK, so we have an argument here. I think the Monte Enebro goes best with the Sauvignon Blanc, Janice thinks it goes best with the Cab. What do others think?

This is a lovely cheese.

The raw milk creates such delicious nuance. Eating this makes me close my eyes and really savor it.

Delicious with Castelvetrano olives, pistachios, and dried apricot.

I think the Roth is a better white wine cheese than the Tumbleweed. It’s softer, nutty, and goes well with both red and white.

No, there is not
We pull them at at least 9 mo old but it varies
Our cheesemakers pull wheels from the cellars when they are ready. Sometimes it's 9 mo, sometimes older

I also want to point out that since this is a raw milk cheese, you can taste the terroir of Wisconsin cows that graze here in the warm months. We source our milk from local family farms to achieve this taste.
