Use of video is dependent on the situation - for meetings like this yes, for training sessions or remote demos it can be very distracting. And if it is on it has to be done right.

I agree about that for internal boring meetings, but for training classes, the instructor needs the video to map the student's engagement...

I use Windows 10 with a stylus or my Samsung Tablet (again with a proper stylus). You definitely need a device with digitizer.

Big fan of LucidChart for whiteboarding/live diagraming. You can use a mouse and not have to try and draw all the shapes.
I use ms whiteboard , and airsketch .. jamboard is fun too.
Suggestion - watch video without audio, listen without watching, and then look at video with audio - pick up different things each time
